Layers of tender meat beneath a generous layer of skin make belly perfect for slow roasting: a few hours in a low oven leaves it meltingly soft, with crackling that shatters. A brilliant, great-value centrepiece for a festive gathering.
All our pork comes from the Bennett family at Stockings Farm near Amersham, just a few miles from us. They rear free-range, rare breed pigs outdoors on their 130-acre family farm, slowly and to the highest welfare standards, for wonderfully succulent, flavourful meat.
