Lean, tender and full of flavour, with a generous covering of skin for proper crackling. Roast it low and slow, then turn up the heat at the end for crisp, golden crackling – it carves beautifully at the table and makes brilliant cold cuts for Boxing Day.
All our pork comes from the Bennett family at Stockings Farm near Amersham, just a few miles from us. They rear free-range, rare breed pigs outdoors on their 130-acre family farm, slowly and to the highest welfare standards, for wonderfully succulent, flavourful meat.
