Our butchers season the pork belly generously with fresh herbs, garlic, chilli, salt and pepper, then roll and tie it by hand. Slow-roasted, it gives you meltingly tender meat wrapped in crisp, crackling skin – brilliant as a centrepiece, and just as good served cold over the festive week.
All our pork comes from the Bennett family at Stockings Farm near Amersham, just a few miles from us. They rear free-range, rare breed pigs on their 130-acre family farm, slowly and to the highest welfare standards, for wonderfully succulent, flavourful meat.
